I’ve been asked in the past what I cook/eat in a day and although it varies, one of my most made meals is a classic stir fry dish. To give a bit of background, I was noticing I was often feeling a little sick or nauseous after eating certain foods so I went ahead and took a food sensitivity test only to find out that CHICKEN (yes, chicken) was on my list of foods I was extremely sensitive to (or so above normal). Crazy right?!
That’s when I did a bit more research on what foods I could eat and I discovered the Sweet Earth Mindful Chik’n and thought this would be an amazing alternative that wouldn’t get me feeling sick. I wasn’t sure how it would taste exactly but decided to give it a try and OMG you guys, I kind of like it more than real chicken haha! Basically Mindful Chik’n is a plant based protein (vegan, non-GMO) that you can be 100% certain doesn’t have any hormones, antibiotics or fats. It’s an excellent source of protein and fiber giving 19g Protein and 6g Fiber. It truly tastes just like chicken (not just saying that) and perfect for pastas, salads, stir frys and more!
With that being said, I’ve started making my stir-fry dishes with this and it’s literally the easiest (and such a healthy) meal! So read on for what what I usually do.
To begin, I usually add a bit of olive oil to a pan and sauté my preferred veggies for about a minute or two, then add the Sweet Earth Mindful Chik’n to the pan and continue to cook everything together for a few minutes and season with salt & pepper. If you want, this makes a perfect healthy (low carb) meal just as is but when I’m feeling like I need a little more substance to it, I add (cooked) brown rice to the pan when the veggies and Mindful Chik’n appear tender. That’s honestly IT! If you want a little extra flavor you can add a bit of soy sauce to give it that traditional stir fry feel and voila!
Since I’m single and live alone I usually will have about 1-2 meals leftover for lunch or dinner when I want something easy to grab and go! I honestly live for meals that are relatively healthy and can be made FAST and with little to no cleanup. This is exactly that!
